Dinner doesn’t have to be Pinterest-perfect to be good for your family. Honestly, most weeks at our house are about finding the balance between real food, simple prep, and feeding hungry kids fast. You don’t have to be a chef—you just have to keep showing up and putting something on the table. Here’s what’s on our menu this week:
Sunday
Rotisserie chicken (thank you, grocery store shortcut!), sweet potato, and steamed broccoli. I also had fresh fruit out so the kids could grab what they wanted. It felt like a healthy reset for the week.
Monday
Panini night! I made turkey, cheese, avocado, bacon paninis with Chick-fil-A sauce as the secret ingredient. Game changer. For sides: honeydew melon and some mac & cheese. The kids had their version—turkey and cheese on Hawaiian rolls.
Tuesday
Homemade lasagna because I had the day off. This is definitely not an every-week thing, but when I have extra time, I like to do one bigger meal. Bonus: it makes great leftovers.
Wednesday
Leftover lasagna—no shame here. This is why I love making a bigger dinner the day before. Less cooking = more breathing room midweek.
Thursday
Taco quesadillas! Instead of the usual chicken quesadillas, I will use seasoned taco meat with cheese folded into tortillas and grilled. So fast, and the kids love it.
Friday
Pizza night. We’ll most likely order out, and it’s a tradition that we need to adopt in order to keep our sanity when we are all so exhausted.
If you’re a busy mom reading this—please know that dinner doesn’t have to be complicated. Simple meals, shortcuts (hello, rotisserie chicken), and even ordering out can still serve your family well. The goal isn’t perfection—it’s connection and just surviving!

I used to buy rotisserie chickens for a nice, easy dinner but would need like at least 3 nowadays to feed us all. I dd roast a huge 9.5 lb chicken this week… and my two older ended up not being home to eat so we had plenty of leftovers! LOL. I made chicken salad for a quick and easy dinner the next night.
