Let’s Look: Quick Weeknight Dinners

It’s time for another Let’s Look. 


In July I shared my favorite shows and podcasts to binge. Then in August I gave y’all a look into my pantry.


Today I am linking up with lots of bloggers and sharing my QUICK WEEKNIGHT DINNERS.


This subject isn’t one that I would have picked on my own. Weeknight dinners is not a strength of mine. However, I didn’t get into the blogging business to stay in my comfort zone. So, here it goes. These are legit dinners that I make every month.


Let’s Look…


Here are 10 “Quick” Weeknight Dinners, sorry no pictures. 


  1. Spaghetti & Meatballs


My kids like the frozen meatballs, so we just throw in a few meatballs into the sauce (from the jar) to heat up. If it is a special night, I will toast up some Texas Toast.


  1. BBQ Turkey Sausage & Buttered Egg Noodles


This is a Tami Kincaid staple. I chop up some turkey sausage link(s), brown the sausage, and then I will coat them with some BBQ sauce. Then boil some egg noodles (noYolk brand), then butter and salt them. I usually plate it with the BBQ sausage on top of the noodles. SOOO YUMMY!


  1. Chicken Alfredo


I buy a rotisserie chicken, chop it up, and mix it into the alfredo sauce (from the jar). Throw that on top of some fettuicini noodles and you are set!


  1. Chef Boyardee Pizza Kit


Another Tami Kincaid special. This pizza tastes like my childhood! The kit does not come with cheese, so make sure you have a bag of mozzarella on hand. The sauce is the best part!


  1. Breakfast


Not Martin’s favorite, but me and the kids love Breakfast for dinner. Everyone loves breakfast foods!


  1. Grilled Chicken w/ Side


I love to marinade chicken with a mesquite marinade packet. We usually eat this with a side of hummus, or bacon wrapped stuffed jalapenos, or rice. The kids aren’t a huge fan of this, so we usually heat up a frozen pizza for them.


  1. Homemade Lunchables


Crazy busy nights call for homemade lunchables- which means grab a couple slices of turkey, a string cheese, and some pretzel thins. Add some grapes or veggies with hummus with that- Simple but delicious.


  1. Rotisserie Chicken w/ Veggies


My kids love rotisserie chicken. I usually pair it with some fresh veggies and fruit. Benny claims that any chicken tastes good with Chick-fil-a sauce.


  1. Sourdough Paninis


Martin and I shared a panini the last time we were in Breckenridge. We love it so much that we have recreated it many many times at home. Sourdough bread, deli turkey, cheese, and bacon. But the true cherry on top is dipping your sandwich into Chick-fil-a sauce. TRY IT!! Sidenote- we make the kids grilled cheese on these nights.


  1. Buffalo Chicken Tender Salad


This salad hits every single time! I buy the Buffalo Ranch salad kid from Taylor Farms. Then I airfry some spicy chicken tenders from Bare, chop them up and throw them on top. Martin says it reminds him of Doc Greens. The kids don’t have any interest in this salad, so they usually eat leftovers on these nights.




 I did it! I was a little self-conscious about sharing these. I’ve never been super confident in my cooking skills and ideas. My kids are very vocal about their dislikes in my cooking- they are kind of little bullies. Someday they will know how challenging to keep on top of everything, get everyone where they need to be, and have them fed in a somewhat healthy way along the way.
